Chicken liver sauce on savoury toast
6 chicken livers.
1/2 etto of butter.
1 small onion.
1 glass of white wine.
1 glass of stock.
Chop the onion as fine as possible and gently fry in a pan with the butter, add the chopped chicken and season with salt. Mix slowly and add the white wine. When it has evaporated add the stock. Allow the sauce to simmer and then purèe when cooked. Spread on pieces of toast and serve.
