Risotto Empoli style

Ingredienti per 4 persone:
1 kg. of local artichokes 600 gr. of rice 100 gr. of butter
200 gr. of breadcrumbs
2 onions
3 crushed cloves of garlic salet, pepper, water
1/2 lemon
1 spoonful of flour.
Cooking time:
45 minutes Take the artichokes and clean them, leaving only the hearts. Slice up and leave to soak in a liquid composed of water, the juice of half a lemon and a spoonful of flour. In another pan fry some chopped onion in the butter mixed with the oil. When the onion is cooked add the artichokes. When they start cooking, season with salt and pepper and water down the sauce with some of the liquid from their marinade. In yet another pan fry some chopped onions and then add the rice.
Flavour with the white wine.
Once the wine has evaporated add the sauce with the artichokes and continue cooking. When cooked add a dob of butter and the parmesan cheese. Advised wines: Ruffino Torgaio Ch’ant’ "fresco di governo" Azienda Chianti Ruffino Fattorie in Greve in Chianti
